500g Colcom Chakalaka Sausage, taken out of skin
1 tin Sweet Corn
1 cup cooked Brown Rice
2 can Red Kidney Beans, rinsed and drained
1 Red pepper, de-seeded and finely diced
1 bunch Spring onions, chopped
1 small Red Chilli, seeds and rib removed, diced
3 Tbls Olive Oil
Juice of 1 Lime
1 tsp Cumin
2 cloves Garlic, finely chopped
3 Tbls Fresh Coriander, roughly chopped
Salt and Freshly Ground Pepper
1 cup crumbled Feta Cheese
- Simply split open the Chakalaka and gently fry and cook through, the inside meat. Set aside.
- Add corn, brown rice, red pepper, red kidney beans, chilli, spring onions and chakalaka “mince” to a large bowl.
- In a smaller bowl, whisk together the olive oil, lime juice, cumin, garlic, coriander and salt and pepper. Fold dressing through into the rice mix, making sure dressing is well incorporated, toss through crumbled feta cheese.
Serve with crispy bread.
