2 x 500g Colcom Country Style Boerewors
1 cup Chicken stock
2 cloves Garlic, chopped
1 Onion, thinly sliced
1 Red Pepper, thinly sliced
1 punnet Oyster Mushrooms, roughly chopped
1 tsp dried Oregano
1 Tbls Olive Oil
2 cans Cannellini Beans
2 tins Chopped Tomatoes
6 cups Baby Spinach
Salt and freshly Ground Pepper to taste
- Gently fry and colour the Country Style Boerewors.
- Set aside to cool slightly then cut into bite size pieces.
- Add some olive oil to a pan and gently sauté the onions, garlic and red pepper and oyster mushrooms. Add the oregano, cannellini beans, stock and tomatoes, simmer gently for 10 minutes.
- Add the Colcom Country Style Boerewors to heat through and lastly add baby spinach five minutes before serving.
