4 cups Penne Pasta
500g Topside Beef Mince
500g Colcom Cambridge pork Sausage
300g Colcom Hot or Mild Salami, thinly sliced
1 Green Pepper, chopped
1 small Onion, chopped
½ cup Kefalotiri Cheese, grated
2 cloves Garlic, minced
I punnet White Mushrooms, cleaned and sliced
1 packet Kalamata Olives, pips removed and sliced
Large jar Marinara Sauce
1-2 cup Mozzarella Cheese, grated
- Cook Penne according to packet instructions. Drain, drizzle over olive oil and set aside.
- Brown the beef mince and then sausage in a skillet over medium heat until cooked, slice sausages, then put in a large bowl. Add green pepper, onion, Kefalotiri cheese, oregano, garlic, mushrooms and olives. Add pasta and marinara sauce, toss well to combine.
- Pour mixture into a greased Pyrex/ oven proof dish. Sprinkle 1 – 2 cups mozzarella cheese over the top. Bake in a preheated oven at 180°C for 15 to 20 minutes or until cheese is golden brown and bubbling.
