250g New Potatoes
8-10 Colcom Cambridge Pork Sausages
3 1/3 cups frozen Peas
1 Red Onion, sliced
1 cup Mint leaves
2 Tbls chopped Parsley
1/3 cup Olive Oil
2 Tbls Lemon Juice
200g Feta Cheese, drained and cubed
Method
- Cook potatoes in boiling, salted water until tender, drain.
- Sauté your sausages in a heavy based saucepan until golden and cooked. Thickly slice and halve the potatoes.
- Pour boiling water over the peas and leave for 3 minutes, then drain and refresh in cold water.
- In a large bowl or platter place the sausages, potatoes and remaining ingredients.
