1 Tbls Olive Oil
1 Medium Colcom Chorizo sausage - sliced
½ Red and ½ green pepper - finely sliced
55g Green Beans, blanched and drained
For The Dressing:
3 Tbls Olive Oil 1 Tbls White Wine Vinegar
1 tsp Wholegrain Mustard 1 Tbls Clear Honey
Salt and freshly ground pepper.
Goats Cheese (can use Feta)
2 Tbls Chopped fresh Parsley
For the salad
- Heat the oil in a frying pan.
- Add the Chorizo sausage and fry on a medium heat for 2 minutes, until the oil is released from the Chorizo.
- Add the pepper slices and fry for a further 2 minutes, or until softened.
- Add the cooked beans and stir until heated through.
For the dressing - Mix together all of the dressing ingredients in a bowl until well combined.
To serve, spoon the salad into the centre of a serving plate and drizzle with the dressing. Crumble the goat’s cheese (or feta) and sprinkle over chopped parsley.
