1 x 500g Colcom Red Viennas cut into bite- size pieces
1 x 250g Colcom Streaky Bacon, chopped
200g Onions, finely chopped
2 cloves Garlic, finely chopped
1 Red Pepper, finely chopped
1 tin Red Kidney Beans, rinsed and drained
1 tin Baked Beans
1 tin Tomatoes
1 Red Chilli, de-seeded and finely chopped
Pinch Cayenne Pepper
Salt and Black Pepper, to taste
200ml Chicken stock
30ml Tomato Paste
30ml fresh Coriander finely chopped
Grated Mature Cheddar or Kefalotiri Cheese - optional
- Heat the oil in a large pan and fry the bacon, onion and garlic, stirring often until the onion softens.
- Add the red pepper, beans, tomatoes, chilli, stock and tomato paste. Simmer uncovered for about 1 hour or until mixture has thickened.
- Add the red viennas and stir in the fresh coriander.
- Spoon the Mexican Vienna stew onto mashed potato, rice or starch of your choice.
