1 x 500g Colcom Frankfurters, sliced into rounds
1 large Onion, peeled and chopped
1 Red Bell Pepper, chopped
2 cloves Garlic, finely minced
5 large Potatoes, peeled and chopped into cubes
Freshly ground Black Pepper
A few sprigs fresh Thyme
1 cup strong Cheddar Cheese, grated
- Preheat the oven to 200°C
- Line a large baking sheet (with sides) with several sheets of foil, and drizzle with a bit of olive oil. Spread the oil out over the pan. Set aside.
- Put the sausage rounds, garlic, onions, red pepper and potatoes into a large bowl. Drizzle with a couple of Tablespoons of olive oil and season to taste with salt, pepper, paprika and fresh thyme. Toss together with your hands until everything is evenly distributed. Tip out onto the baking sheet and spread out evenly.
- Place into preheated oven and bake for 45 minutes to 1 hour, stirring every 15 minutes or so, until the potatoes are golden brown and tender. Turn off the oven. Scatter over the grated cheese over the top of the bake. Pop back into the oven for 2-3 minutes for the cheese to melt.
