1 cup white Long Grain Rice
2 stalks Celery, trimmed and finely sliced
1 small Red pepper, finely chopped
2 Spring onions, thinly sliced
½ cup Sultanas
2/3 cup dried, diced Apricots
1/3 cup slivered Almonds
1 Tbls Olive Oil
1 Tbsl Lemon juice
1 Tbls White Wine Vinegar
1 tsp Curry Powder
1 tsp Caster Sugar
- Cook rice in a pan of boiling, salted water until cooked. Drain. Refresh under cold water. Drain and cool completely.
- Combine rice, celery, spring onion, sultanas, apricots and almonds in a bowl. Place olive oil, lemon juice, vinegar, curry powder and sugar in a bowl, season with salt and pepper. Whisk well to combine.
Pour dressing over the rice mixture. Toss to combine and serve.
