1 onion – finely chopped
1 potato – peeled and diced
340g frozen peas
1 litre ham stock
Salt and pepper
4 Tbls double cream
- Put the butter into a large, heavy sauce pan, melt over a low heat and add the onion and potato. Leave to sweat for 10 minutes.
- Add the peas, stock, salt and pepper.
- Bring to the boil then simmer slowly for 15 minutes.
- Remove the soup from the heat and liquidize until smooth.
- Add the cream and check seasoning.
