2 Kg Colcom Family Ham
1 Onion, peeled and cut in half
2 litres Cocoa Cola
For The Glaze
1 Tbls whole Cloves
1 Tbls Black Treacle
2 tsp English Mustard
2 Tbls Old Fashioned Brown Sugar
- Place the Colcom Family Ham in a large pan, skin side down and add the onion and pour over the Coke.
- Bring to the boil, reduce to rolling boil, put the lid on, though not tightly, and cook for the calculated time (40 minutes per kilo).
- Meanwhile pre-heat the oven to 200°C.
- When the ham has had its cooking time take it out of the pan and let it cool slightly for ease of handling. Then gently peel off the rind, leaving the fat intact. Score the fat with a sharp knife to make fairly large diamond shapes, and stud each diamond with a whole clove. Then carefully spread the treacle over the fat, taking care not to dislodge the cloves. Gently pat on the mustard and sugar onto the sticky fat. Bake in the oven for approximately 10 minutes or until glaze is burnished and bubbly.
Serve thinly sliced with a selection of vegetables and new potatoes.
