500g Colcom Collar Fillet
4 Tbs Olive oil
1 cup pimiento stuffed olives
1 - 2 tsp paprika
1 tbs finely chopped onion
1 clove garlic minced
2 Tbs parsley chopped
2 tsp vinegar
salt and pepper
- Thinly slice Pork and flatten with a meat mallet.
- Brush the slices of the Pork with olive oil, salt and pepper.
- Cook on a hot griddle or frying pan until cooked
- Remove from the heat and place on a platter to rest.
- Chop and mix the rest of the ingredients. Spoon this sauce over the meat.
