1kg Colcom Collar Fillet
1 tin of chopped tomatoes (natural, no herbs etc added)
- Cut the Colcom Collar Fillet in small cubes.
- Place in a saucepan with some heated Olive Oil and brown.
- Add boiled water just to cover the meat. Add salt, black pepper corns, bay leaves and simmer for 20 minutes.
- Add chopped onions, carrots (cut in circles) and tomatoes. Simmer for 20 minutes.
- Add prunes, parsley and simmer 15 minutes.
Best served with rice.
