4 Pork Schnitzels – made from Colcom Pork Fillets
¼ cup Mayonnaise
½ cup Greek Yoghurt
2-3 Tbls Creamed Horseradish
2 Tbls Wholegrain Mustard
Salt and freshly ground Black pepper
1 Iceberg lettuce, shredded
½ Red Onion, sliced
1 large Green Apple
Small handful of Mint Leaves, chopped
4-8 crusty Rolls (if serving in a roll)
Start off this dish by making your own schnitzels by dusting slices of pork fillets in seasoned flour, dipping into beaten egg and coating in breadcrumbs. Fry schnitzels until cooked through and golden, drain on kitchen towel and keep warm.
To make the remoulade:
Whisk mayonnaise, yoghurt, horseradish and mustard together. Season and toss sauce through salad ingredients. Pile remoulade into crispy bread rolls and top with schnitzels. If not using bread rolls, pile pork schnitzels onto remoulade on a plate and serve with baked potatoes.
