500g Colcom Pork Mince
50g fresh Breadcrumbs
50g grated Kefalotiri Cheese
2 Tbls chopped Parsley
2 cloves Garlic, chopped
Zest of 1 Lemon
Salt and Pepper
2 packets Rocket, washed and dried
8-10 Cherry Tomatoes, halved
Place breadcrumbs in a mixing bowl and moisten with 2 Tbls cold water. Add the pork mince, Kefalotiri, parsley, garlic, lemon zest and salt and pepper. Mix well and shape into golf ball size patties.
Heat oil in a pan and cook patties for roughly 7 minutes on each side, or until they have a golden crust and are cooked through. Alternatively you can cook these patties on a barbecue outside.
Serve with lemon wedges and cherry tomato and rocket salad.
