1.2kg Colcom Collar Pork Fillet, trimmed and sliced into cubes
1 ½ cups Pineapple, cubed
3 Tbls Soy Sauce
1 cup Beef Stock
1 Onion, chopped
5 cloves Garlic, minced
3 Tbls Vegetable cooking oil
¼ cup Caster Sugar
Salt and Black Pepper
- Heat the oil in a pan, sauté onion and garlic. Add the pork and cook until the colour turns to a medium brown.
- Add the pineapple cubes, stir and cook for about 3 minutes.
- Pour in the soy sauce. Stir. Add the beef stock. Bring up to the boil and simmer for 45-50 minutes. Add water if needed.
- Stir in the sugar and add salt and pepper. Cook for 3-5 minutes more.
