1 Colcom Pork Collar Fillet
1 bag baby tomatoes
250 ml red wine
250 ml chicken stock
1 egg plant (aubergine) - chopped
1 punnet mushrooms - chopped in half
1 tsp garlic
½ tsp chilli
Salt and pepper
- Place the collar fillet in a pot.
- Add in the stock and the red wine.
- Then add the chilli and the garlic, bring to the simmer.
- Then add in all the veg.
- Keep turning the collar as you cooking, this should cook for 1 hour.
