½ small Red pepper, finely chopped
¼ cup fresh Parsley
1 tsp Oregano
100g finely chopped Colcom Ham (or Colcom Salami)
1 cup grated Cheddar Cheese
½ cup Tomato Paste
2 Sheets ready rolled Puff Pastry, thawed
Preheat the oven to moderately hot, 200°C.
Combine the red pepper, parsley, oregano, ham (or Colcom Salami) and cheese in a bowl.
Spread the tomato paste onto each sheet of pastry, leaving a 2cm border on one side. Sprinkle the red pepper mixture over the top. Roll up the pastry to enclose the filling, leaving the plain edge until last. Brush the edge lightly with water and fold over and seal.
Cut each roll into 2cm rounds (Pinwheels) and place onto greased baking trays. Bake for 20 minutes or until golden.
