3 Onions peeled, and FINELY chopped
100g FINELY cubed Colcom Garlic Polony
2 Tbls Olive Oil
2 Star Anise Pods (optional)
500g Self-Raising Flour
1 cup Strong Cheddar Cheese
3 Tbls Herbs, finely chopped (Thyme, Chives, Rosemary etc)
½ tsp Salt
1 cup Buttermilk
½ cup Water
- Preheat oven to 180°C and line a medium bread loaf tin with baking paper
- Heat the olive oil in a skillet and sauté the onions and star anise over a gentle heat for around 12 minutes, or until soft and just starting to turn golden. Seat onions aside and cool slightly. Remove the star anise.
- Sift the flour and add the salt, cheese, polony and herbs. Mix. Add the buttermilk and water and gently mix with a wooden spoon until it forms a sticky dough.
- Spoon the dough into the prepared loaf pan and bake for 1 ½ hours until golden on top. You will know when your bread is done when you insert a sharp knife or skewer into the thickest part and it comes out clean.
