800g French Polony (offcuts) and Viennas cut into bite size pieces
15ml Sunflower oil
2 Onions, chopped
30ml Medium Curry powder
3ml Ground Turmeric
2 Potatoes, peeled and cubed
1x410g Tinned Tomatoes
250g Frozen Mixed Vegetables
Salt and Pepper to season.
- Heat the sunflower oil in a heavy based saucepan and fry the onions until soft.
- Add the curry powder, turmeric, garlic, and sauté for another minute.
- Add the tomatoes, sugar and potatoes and cook until tender.
- Add the frozen vegetables and the Polony and Viennas and heat through for 5 minutes.
- Season to taste.
