200g Colcom French Polony (or offcuts)
200g Colcom Red Viennas, cut into bite size pieces
1x410g can Chopped Tomatoes
250ml Chicken Stock
200g Parboiled White Rice
2 cloves Garlic, crushed
10ml Fresh Mixed Herbs or 5ml Dried Mixed Herbs
2 Green Peppers, seeded and chopped
1 Green Chilli, deseeded and chopped
1 x410g red Kidney Beans, drained and rinsed
Salt and Pepper to taste
Spring Onions chopped, to garnish.
- Heat the tomatoes and the vegetable stock together in a large sauce pan. Once simmering, add the rice, garlic and herbs and simmer for 10 minutes or until the rice is almost soft.
- Stir in the peppers, beans Polony, Viennas and chilli and continue cooking for a further 5 minutes.
- Garnish with chopped spring onions.
