300g Colcom French Polony, thickly sliced, cut into cubes
1 Onion, finely diced
1 Carrot, grated
1 Red pepper, sliced into thin strips
2 Cloves Garlic, crushed
1 Tbls Tomato Paste
Salt and Pepper
1 can Butter Beans
1 can Speckled Sugar Beans
1 can Red Kidney Beans
1 can Vegetable Curry/Beans
1 can Mild and Spicy Chakalaka/Beans
¼ cup Parsley
Handful of fresh Coriander
1/3 cup Plain Yoghurt (optional)
- Fry the onion, carrot, pepper and garlic in sunflower oil. Add tomato paste and cook for a minute. Season.
- Add the beans, curried vegetables and chakalaka beans/vegetables and heat through.
- Add and stir through the cubed Colcom French Polony and parsley.
- Serve piled on a platter with chopped fresh coriander and yoghurt (if using) and crusty bread for a hearty meal.
