Ingredients for the Salad
2 Garlic cloves, halved
200g mixed salad leaves
15 pitted Black Olives
4 Anchovy fillets, drained
8 Radishes, sliced
20 Cherry Tomatoes, halved
2 Hard Boiled Eggs, sliced
50g Gruyere or Kefalotiri Cheese, thinly sliced
100g Colcom Tongue, thinly sliced
100g Colcom Picnic Ham, thinly sliced
Watercress to garnish
Ingredients for the Dressing
90ml Olive Oil
30ml Red Wine Vinegar
10ml Lemon Juice
5ml French Mustard
Salt and freshly ground Black Pepper
- Rub the salad bowl with garlic.
- For the dressing mix all ingredients until well combined.
- Combine all the salad ingredients in a serving bowl and toss through the dressing just before serving. Garnish with watercress and serve immediately.
