1 Packet Corkscrew or Tube Pasta
3 Tbls Olive Oil
1 cup sliced White Mushrooms
1 cup chopped Colcom Picnic Ham
1 cup grated Mature Cheddar Cheese
½ cup fresh Basil
1 tsp chopped fresh Garlic,
Salt and Pepper
- Bring a large pot of salted water to the boil. Add the pasta and cook until al dente, about 7-10 minutes or as per packet instructions. Drain, reserving ½ cup cooking liquid.
- Warm the oil in a large pan over medium heat. Add onions and garlic and sprinkle with salt and pepper and sauté until translucent. Stir in the mushrooms and cook for about 5 minutes. Stir in the ham and cook until warmed through, 1-2 minutes.
- Add the ham mixture, Cheddar and basil to the pot with the pasta. Toss to combine, moistening with cooking liquid if necessary.
- Taste and season with salt and pepper if needed and serve immediately.
