½ cup Butter
2 cups Onions, chopped
1 Green Pepper, chopped
4 cloves Garlic, minced
1 litre Chicken Stock
1 can peeled and chopped Tomatoes
250g Frozen Corn
2 tins Lima/Butter Beans
2 Tbls Worcestershire Sauce
1 ½ cups BBQ Sauce
500g Colcom Family Ham, cooked and chopped
1 whole Chicken, cooked and chopped
1 tsp Ground Black Pepper
½ tsp Salt
- In a large Dutch oven (oven proof dish), melt the butter over medium heat. Add the onion, green pepper and garlic; cook, stirring frequently until tender. Stir in the chicken stock and the tomatoes, corn, beans, Worcestershire sauce, tinned tomatoes and BBQ sauce, and gently bring to the simmer for the next 30 minutes.
- Stir in the ham, chicken, black pepper and salt and simmer gently for 30 minutes more.
- Serve piping hot over mashed potatoes, rice or pap.
