250g Colcom Streaky Bacon, diced and fried until crispy
4 cups of cut Watermelon, into cubes
1 ripe Avocado, cut into small cubes
1 pkt Kalamata olives, pitted and drained
½ Red Onion, thinly sliced
½ cup fresh Mint, chopped
2 Tbls Olive Oil
1 Tbls fresh Lime juice
1 tsp Salt
¼ tsp Black Pepper
½ cup Feta Cheese, crumbled, or cubed
- Place the watermelon, avocado, red onion slices, Kalamata olives and mint in a large salad bowl.
- To make the dressing, whisk the olive oil, lime juice, salt and pepper.
- Drizzle over the salad. Gently stir everything to combine.
- Cover with cling film and let it marinade in the fridge for at least 30 minutes.
