6 medium to large Potatoes, peeled
250g Colcom Bacon, finely diced and fried until crispy
½ can Condensed Milk
¾ cup good quality Mayonnaise (not salad cream)
1 tsp Hot English Mustard
Salt and Pepper
2 Tbls Parsley, finely chopped
2 Tbls Spring Onions, finely chopped
Extra parsley and spring onion for presentation
- Cook the potatoes in boiling salted water (do not over- cook so they fall apart). Remove from water and when slightly cooled, cut into thick slices.
- In a bowl add the condensed milk, mayonnaise, mustard, parsley, chives, salt and pepper. Stir thoroughly to incorporate all the ingredients.
- Pour over potatoes and gently combine.
- Pile onto a serving platter and scatter over parsley, spring onion and finally crispy bacon.
