300g Broccoli, washed and stalks trimmed
1 large Onion, roughly chopped
250g Colcom Streaky Bacon
3 smallish Potatoes
1.5 litres Chicken Stock
Salt and Pepper
- Sauté onion in the butter in a deep pan, do not let it colour. Stir in half the bacon, then the diced potatoes. Sauté for at least 10 minutes. Pour in the chicken stock and bring to the boil, adding salt and pepper as you go. Turn the heat down and simmer gently for 10 minutes until the potatoes collapse against slight pressure from a spoon.
- Add the broccoli and simmer for 10 minutes. You want to keep its brilliant green colour. Pour in the milk, simmer briefly then process mixture until smooth. Adjust your seasoning. Crisp up the remaining bacon, then serve soup in warm bowls topped with crispy bacon.
