2 cups Brown Lentils
1 Tbls Olive Oil
1 medium Onion, chopped
½ cup finely sliced Celery
3 rashers Colcom Streaky Bacon
2 cloves Garlic, crushed
2/3 cup chicken stock
1 Tbls chopped fresh Thyme
2 Tbls chopped fresh Parsley
Salt and Pepper
Place the lentils in a bowl and cover well with water and stand for an hour.
Drain lentils, cover with water in a pan, and simmer for 20 minutes or until just tender, drain.
Heat oil in a pan and add onion, celery, bacon and garlic, cook stirring until onion and bacon are slightly browned.
Add lentils, stock, seasoning and thyme, cook stirring until liquid has evaporated.
Lastly stir in the parsley and serve.
